An East Coast couple trying to make a new life in the South-West. Good-bye big city, southern comfort food, beaches, and trees. Hello spurs, steaks, cowboys, and flat farm land.
I'm Meagan. I love chocolate, HGTV, spending hours in Target, laying on the beach, sleeping in, my furry four-legged children, meeting someone new, girl talk, my boyfriend "Gym", & my husband Shane. :) I'm addicted to: my iPhone, taking pictures, decorating, always having a project, baking, and googling.
I'm currently in school to be a Veterinarian. I enjoy the challenge veterinary medicine gives along with the crazy animals, cases, and clients.
Shane. A USMC veteran currently working as a Avionics Electrician with a military contracting company. When not fixing helicopters he is playing his games, sleeping, annoying me, spoiling the cats, and making me laugh.

Met in 2005. Married in 2007. Survived 2 deployments. Moved 3 times. Countless Memories. Countless Jokes. Priceless Love.
Yesterday, October 30th, I ran my first 5k. It was for the Panhandle Caner Cure Foundation and it is only the 2nd year they've had the race. The foundation helps provide education, prevention, research and patient support to those affected by cancer in the Panhandle. The course had some hills and it was a little chilly, not what I'm used to. However, I finished in 37:21, 115th overall and 21st in my age group. I have another race on November 13th put on by the local Gold's Gym, then another on Thanksgiving Day. This running thing is kind of addicting.

Another accomplishment? I get to cross something off my 101 things list. I am currently fostering two 3-4wkish old kittens. When I first got them last week, I was getting up with them every 3-4 hours to bottle feed them, stimulating them to make them go potty, cuddling them, and keeping them warm. They are super super cute! & no, Shane & I are not keeping them. The little girl, gray one, is feisty, talkative, and loves to beat up on her brother and already has a home. The little boy orange and white, is very chill, laid back, and doesn't mind getting a bath and will meet his possible new mommy and daddy on Monday. The only thing I'm asking of the new owners is that they have then spayed/neutered and get them vaccinated.
Today we met one last time with the builder before construction starts on the house! It was very exciting to see the blue-prints, pick out counter tops, cabinets, wall color, back splash, carpet, tiles, and all the fixings! They have already started leveling out the lot, and they will break ground on Monday! We close on February 5, 2011 which means in 3.5 months....we will FINALLY have a house!!
Also, for tonight's dinner we had "Crispy Ranch Chicken"
Recipe:
The original directions say to "Mix rice cereal, ranch mix and parmesan cheese together in bowl. Dip chicken in egg whites, then in the cereal mixture to coat evenly. Arrange chicken on greased baking sheet. Bake until golden. 30 to 35 minutes."
However I made a mess up....I didn't have any rice cereal, so I used bread crumbs. I still added some parmesan cheese in it. & I mixed some milk in with the ranch mix. I made it into almost like a paste. I then dipped the chicken in the egg.....in the ranch "paste" then in the bread crumbs.
It was still super yummy! I served it with some roasted potatoes & veggies.
Yesterday, October 20, was our 3 year wedding anniversary! Its crazy to think that we've already been married for three years! In three years we have survived 1 deployment, bought a house (& then sold it), and moved from the East Coast to the South-West.
Here are some pictures from that day:

This one wasn't actually taken by our professional photographer, but rather a friend. & I loved the way it turned out.
Another Favorite
Taken by a guest..
Another favorite!! Taken by the same friend as above.
Here's to many many many many more anniversaries to come!!
Also, yesterday starts my "101 things in 1001 days" project.
Let the fun begin!
A girl I know from NC recently sent me information about these trips that are offered to Pre-Vet and Veterinary students. This group called VIDA takes students to Central America for up to two weeks. In that time the students spay, neuter, and vaccinate pets and livestock. I am hoping to attend one of these trips next summer. It would be an amazing, eye opening experience (plus, it wouldn't look too bad on my vet school apps).
The Mission:
Complete 101 preset tasks in a period of 1001 days.
The Criteria:
Tasks must be specific (ie. no ambiguity in the wording) with a result that is either measurable or clearly defined. Tasks must also be realistic and stretching (ie. represent some amount of work on my part).
Why 1001 Days?
Many people have created lists in the past - frequently simple goals such as new year's resolutions. The key to beating procrastination is to set a deadline that is realistic. 1001 Days (about 2.75 years) is a better period of time than a year, because it allows you several seasons to complete the tasks, which is better for organizing and timing some tasks such as overseas trips or outdoor activities.
Beginning Date: October 20, 2010
Estimated Date of Finish: July 18, 2013
